Pancakes/pikelets
2 cups rice flour
1 tsp baking powder
1 tablespoon golden syrup
½ tsp salt
2 tablespoons sugar (optional)
1 egg
Water to mix to desired consistency
Mix all dry ingredients together in bowl. Add 1 cup water, golden syrup and egg, mix
till smooth. Add water till you get the thickness/thinness of batter you want,
keeping in mind that a very thick batter will produce a thick pancake and a
thin batter will produce a thin pancake.
Fry on an oiled moderately heated pan till bubbles appear on surface.
Turn and fry on other side till cooked. Obviously if you’re after pikelets you’ll
make smallish, thick pancakes, if you want crepes, you’ll need to make the
batter much thinner. But every variation in between has always been gobbled
down pretty fast at our place too!
