Tamara's biscuits (very quick and easy)


1 egg
2/3 cup sugar
1 ½ cups rice flour
1 teaspoon baking powder
½ cup oil (canola, rice bran, safflower, sunflower)

Mix egg and sugar. Add remaining ingredients, mix well and press into 20 x 30 cm tin. Bake at 180 degrees Celsius for 20-30 minutes, until lightly brown. Cut into squares while warm.

These are plain biscuits which can be varied by adding a few drops vanilla or replacing some of the sugar with brown sugar. They can also be iced while warm before cutting into squares, or drizzled with a small amount of icing after cutting (my preference as it reduces the sugar somewhat).

If you tolerate amines, or are doing an amine challenge, you can replace 2 tablespoons of rice flour with 2 tablespoons of cocoa.
